Salads are a great and yummy way to eat heartily while controlling diet and include enriching nutrients and proteins. As salads have the bad rep of not being great when it comes to taste and in reality, not all salads will appeal to the taste buds.
So today I thought to make a tasty but healthy boiled groundnut and corn salad dressed with aloo bhujia and it turned out so yummy and filling. This can be served as an evening tea-time snack too. So here is a quick recipe for boiled groundnut and corn salad.
Ingredients
- 1 cup of sweet corn
- 1 cup of peanuts
- 1/2 cup of chopped tomatoes
- 1/2 cup of diced onions
- 1 tsp of pepper powder
- 1 tsp of coriander powder (optional)
- 1 tsp of chat masala
- Aloo bhujia for dressing (optional)
- Handful of coriander
- Diced green chili
- Half slice of lemon
- A pinch of salt/ according to your taste
Preparation:
Take a cup of peanuts and soak them in water for 2 hours or overnight.
Now take a pressure cooker or a pot with water and add peanuts and corn with a spoon of salt and boil it till they turn soft. If using a pressure cooker cook for 2-3 whistles.
In the meantime chop and dice the onions, tomatoes, and coriander.
Take a bowl to add the peanuts, corn, onions, tomatoes, coriander, salt, chat masala, chili pieces, and coriander powder and mix until everything is mixed well, taste and adjust the salt if needed.
Lastly, add a dash of lemon juice and garnish with aloo bhujia or sev.
Your delicious and healthy salad is now ready for serve.
